He does cut ryans hands off, but that was in the second draft in the script and Ryan said shit was changed so I don't maybe that's different now.

Apparently this film is a modern western. That means that the characters are very ambiguous e.g no one is really evil and that gosling might be the bad guy looking for redemption. Chang cuts goslings hands off at the end of the film as a way of redemption for gosling.
